Hotel - Considering Hotel Adriatic is just 2* we found it very clean and good value for money. We paid extra for a sea view and balcony which was stunning (especially the sunsets), although there was no double glazing so the road noise was quite loud. We went half board and you have dinner in the restaraunt across the road. The food was excellent and there was always an extensive choice with something different most nights. The restaurant also had views over the bay so you could watch the sunset while you ate.
It was a 10 minute bus ride into Dubrovnik Old Town with buses stopping outside the hotel every 20 minutes and costing just 80p one-way (or £1 if you paid on the bus)
Resort - Lapad bay was quite quiet, but I think we went a little bit out of season and it was starting to pick up towards the end of our holiday. The hotel does not have a swimming pool, but there was a beach and sunbathing platform just a 1 minute walk from the hotel. The coastline and scenery in Croatia is stunning and Dubrovnik Old Town is a must-see (although it gets very busy during the day)
If you want to go and see the islands the best way is to go down to the harbour in the old town and get a water taxi, the organised excursions are a bit rushed and expensive for what you get extra, but shop around to get the best price.Locrum (the nearest island to Dubrovnik town) is definately worth the trip, it has an old monastry, a fort and a botanical garden which are lovely to walk round (we went back 3 times!). In Dubrovnik Old town we would recommend to walk the city walls (but don't bother with the commentary), and definately go and see the war photo museum. It is worth going back there in the evening for a meal as well as there are many places to eat and it is much quieter (but don't go at night if you're scared of birds - there's thousands!)
We also went on the 'canoe safari' excursion which was really good fun, the pictures they take are excellent quality. The best thing to do is all chip in to buy 1 CD of the photos and then swap e-mail addresses and e-mail them to each other when you get home (I know it's cheeky, but it was the instructor that suggested it!)
Dubrovnik is definately a place for couples as there is not a lot of activities for children.
In all, Croatian people are extremely friendly and it is well worth a visit - there aren't many places we would go back to, but Croatia is one of them.
